Originally in the 19th century, the famous spritz consisted of Italian white wine and water – it is called the spritz bianco.
Tonic water was widely used as a malaria prophylaxis throughout Italy, and besides wine and seltzer, it was for a long time the only drink available in many bars across Italy. In order to make the white wine lighter and more digestible, it was mixed with tonic water.
As a result, a light aperitif with bitter and sweet flavors was created. This was the origin of the Vitoni, the “Aperitivo Leggero”.
